Apple syrup is a great way to use up soft apples at the end of the week. It’s easy to make, uses a few simple ingredients, and is delish on top of pancakes, waffles, a sourdough dutch baby, or even biscuits!

I thought of this recipe on a Sunday morning when I was making pancakes. I had a can of half used canned crispy apples in the fridge I needed to use up. So instead of making a berry reduction, I pulled the apple slices out and made a syrup. It turned out so good!
I have a sweet tooth so I love to find ways to dress up my pancakes with homemade syrups or toppings. Some of my favorites are:

What Apples Should I Use?
You can use any apples that you have on hand for this recipe. Different varieties of apples will give it a slightly different taste of course, but it will still turn out nice and sweet.
I love to use my canned apples for this recipe. Each fall I can a bunch of Honeycrisp apple slices from a local orchard and they are delicious!

What Can I Serve Apple Syrup With?

Apple Syrup Ingredients:
3-5 apples sliced or diced
2 tablespoons of butter
3/4 cup of brown sugar
1/2 cup of water
1 1/2 teaspoons of cornstarch

How to Make Apple Syrup
First, peel, core, and slice 3-5 apples. Or if you have canned apple slices, then you can skip this step.
In a small pot, melt 2 tablespoons of butter over medium heat.
Add 3/4 cup of brown sugar and stir.
Measure out a 1/2 cup of water and add 1 1/2 teaspoons of cornstarch to it. Stir the cornstarch in until it is completely dissolved.

Add the cornstarch and water mixture to the pot and turn the heat up to high. Bring the syrup to a boil for a minute or two.
Reduce the heat to medium or medium-high heat. Add your sliced apples.
Cook for 8-10 minutes until the apples are soft and your syrup has thickened. Stir often to prevent it from burning.

Serve warm over pancakes, waffles, sourdough dutch baby, or ice cream.
