Sourdough dutch baby is also known as a German pancake. It uses only a few ingredients to create a delicious fluffy pancake. Top it with your favorite fruits or syrup and you have a breakfast everyone will enjoy.

Protein Packed

I love making a sourdough dutch baby when I have an abundance of eggs from my chickens that need to be used up. Since this recipe calls for 6 eggs, it is an easy way to use up some of our eggs and also create a protein-packed breakfast. My toddler is not a huge fan of scrambled eggs at the moment, but she will eat a whole slice of a sourdough dutch baby no problem!

Can I Use Sourdough Discard?

Yes! You can use active sourdough starter or sourdough discard for this recipe.

What is sourdough discard? Essentially, it is starter that was fed, reached its peak of activity (its rise), and has fallen again.

Sourdough Dutch Baby Ingredients:

6 eggs

2 cups of sourdough starter

1/3 cup of whole milk

1/2 tsp of salt

1 tsp of vanilla extract

2 tbsp of honey or maple syrup

6 tbsp of butter

Optional: crispy canned apple slices or cooked apple sliced

How to Make a Sourdough Dutch Baby

Preheat the oven to 425 degrees Fahrenheit.

Place your cast iron skillet into the oven to heat up while you prepare the ingredients. It is important for your skillet to be nice and hot. This helps your dutch baby bake quickly, not stick, and be nice and puffy.

In a large bowl or a blender, add 6 eggs, 2 cups of sourdough starter, 1/3 cup of whole milk, 1/2 tsp of salt, 1 tsp of vanilla extract, and 2 tbsp of honey.

Mix until smooth by hand or with a blender.

Remove your hot cast iron skillet and melt 6 tablespoons of butter in it. If needed place the skillet back into the oven to melt the butter.

Once the butter is melted, add your batter to the skillet. Do not mix the butter into the batter.

Place the skillet in the oven and bake for 15-20 minutes. Do not open the open door before 15 minutes. If you open the oven door too soon, your dutch baby may deflate.

Serve hot with your favorite fruits, syrup or butter.
