A perfect quick thin crust sourdough pizza!
I love putting my sourdough starter to use and pizza night is no exception! This is my go to sourdough pizza crust recipe because it is quick and easy. If I plan far enough ahead, sometimes I’ll make pizza dough for a thick crust sourdough pizza, but this is my go to 9 times out of 10.
All you need for this recipe is sourdough starter (discard or active), a few seasonings, pizza sauce, cheese, and your favorite pizza toppings.
The Key to a Perfect Crust
A HOT cast iron skillet.
Preheat your cast iron skillet in the oven at 425 degrees Fahrenheit while you are prepping your sauce and topping. The skillet needs to be hot in order for your crust to not stick. You will see your starter begin to cook as soon as you pour it on the skillet.
Sourdough Pizza Ingredients
Crust
Fed sourdough starter or sourdough discard (I don’t measure this. Just add enough to spread over the bottom of the skillet.
Salt 1/4 tsp per pizza
Garlic Powder 1/2 tsp per pizza
Onion Powder 1/4 tsp per pizza
Italian Seasoning 1/2 tsp per pizza
Olive oil drizzled
Sauce
This is a basic pizza sauce recipe that makes enough for 3-4 skillet pizzas. Dress it up based on your preference.
One can of tomato sauce
1 tbsp of garlic powder
1 tsp of onion powder
A dash of salt and pepper
1 tbsp of Italian seasoning
Toppings
You can be as creative as you want with your toppings. Here are a few of my favorites:
- sauted onions and peppers
- ground pork
- pepperoni
- ham and pineapple
- spinach
Sourdough Pizza Directions
Place your cast iron skillets in the oven and preheat it to 425 degrees while you prepare your toppings.
Once the oven is preheated, remove one skillet and spread olive oil over the bottom by tilting it around.
Scoop out your sourdough starter and spread it to the edges of the skillet.
Sprinkle salt, garlic powder, onion powder, and Italian seasoning over the crust.
Drizzle olive oil on top.
Place the skillet back in the oven and bake for 8-10 minutes.
Makes the second crust while the first is baking.
Remove the cooked crust from the oven and add your sauce and toppings.
Place the skillet back in the oven and bake for 5-8 minutes until the cheese is melted.
Remove the pizza from the skillet to slice and serve.
