This one pot sourdough dinner recipe is one of my go to recipes when I’m not sure what to make for dinner. You can pack it full of protein and veggies, using up whatever you have on hand.
What to Put in Your One Pot Sourdough Dinner

For this recipe, there is a lot of flexibility when it comes to ingredients. Choose a protein and then add in whatever veggies you have on hand to fill up your dish.
- Meat: ground beef, shredded chicken, shredded pork, or shredded roast
- Onions
- Peppers
- Garlic
- Carrots
- Celery
- Green Beans
- Green Peas
- Corn
- Potatoes
- Sweet Potatoes
- Butternut Squash
- Yellow Squash
- Zucchini
- Tomatoes
- Lentils
- Black Beans
- Fresh Herbs (parsley, cilantro, basil)



Sourdough Topping
The topping is a combination of sourdough discard, eggs, and seasonings. It creates the perfect bread topping and is even better when topped with cheese.
- 1 1/2 cups of sourdough starter
- 3 eggs
- 1 teaspoon of salt
- 1 teaspoon of herbs de providence
- 3 tablespoons of butter
- 2 teaspoons of baking powder
- Cheese to sprinkle on top

One Pot Sourdough Dinner Directions
Preheat the oven to 400 degrees Fahrenheit.
Cook/prepare your choice of meat.
Cook your fillings until they are tender. I like to add a little bit of butter and bone broth to the pan for them to cook in.
If you cook your fillings in the cast iron skillet, then it is already preheated. If not, preheat your skillet in the oven before adding the fillings and topping.
In a large bowl or a 4 cup measuring cup add 1 1/2 cups of sourdough starter, 3 eggs, 1 teaspoon of salt, 1 teaspoon of herbs de providence, and 3 tablespoons of melted butter. Stir until all the ingredients are fully combined.
Next, stir in 2 teaspoons of baking powder and allow the mixture to rise while you complete the next step.
Add your fillings to a preheated cast iron skillet.
Pour the sourdough topping on top.
Sprinkle on between a cup and a cup and a half of grated cheese.
Bake for 25 minutes until the top is golden brown.
