Gluten Free Meatloaf: A Family Recipe
My mom made meatloaf this way ever since I can remember. I always enjoyed it as a kid and now my daughter loves it too. It just so happens to be gluten free, delicious, and healthy. Which was a relief for my mom when we discovered I had a gluten intolerance as a kid.

This recipe is so easy to make. Packed with seasonings, it has a wonderful flavor. I don’t add a topping to mine because I prefer to just put the ketchup bottle on the table at suppertime, but you could add a topping if you prefer one.
Ingredients
- 2 pounds of ground beef
- 1 small onion finely chopped
- 2 eggs
- 1 cup of grated carrots
- 1 cup of oats
- 1/4 cup of parsley
- 2 tablespoons of tomato paste
- 1 1/2 tablespoons of worcestershire sauce
- 1/2 teaspoon of black pepper
- 1 1/2 teaspoons of salt
- 1/2 teaspoon of paprika
- 1/2 teaspoon of garlic powder
- Cheese slices or grated cheese (optional)

Directions
Preheat the oven to 350 degrees
Prepare your meatloaf plan. If you have one like mine, add aluminum foil to the bottom to catch all of the drippings and make clean up easier.
Combine all ingredients except for the cheese in a large bowl.
Place half of the mixture in your meatloaf pan.



Add a layer of cheese.
Lastly, top with the rest of the meat mixture.
Bake for 1 hour and 15 minutes.
Allow the meatloaf to rest for 10 minutes before slicing.

How to Tell When Your Gluten Free Meatloaf is Done
The best way to tell if your gluten free meatloaf is finished cooking is to test it with a meat thermometer. The meatloaf is fully cooked when the internal temperature reaches 160 degrees Fahrenheit
If you are baking it in a meatloaf pan, then you will also see it pull away from the sides of the pan. This is a great visual cue that your meatloaf is or is close to being done.
How to Keep Your Gluten Free Meatloaf From Falling Apart
Allowing your meatloaf to cool in the pan is the best way to prevent it from falling apart. I always wait about 10 minutes before cutting it. However, if you choose to add the cheese layer in the middle, then you can expect it to break into two pieces when you serve it because the cheese does not bind the two halves together.
How to Make a Gluten and Dairy Free Meatloaf
If you need to make this recipe dairy free, then you only need to make one substitution or omission. Simply swap out the cheese for vegan cheese or leave it out altogether.
